My Husband’s Zucchini Bread

We take our garden seriously, so when we cook with the fruits of our labor, we take the recipes even more seriously.

Don’t believe me? These are the notes my husband has taken over the years while perfecting his recipe.

2 eggs, beaten
2 1/2 cup sugar
2 cups grated zucchini
1 cup olive oil
3 teaspoons vanilla

3 cups flour
1 teaspoon salt
1 teaspoon baking soda
3 teaspoon cinnamon
1/4 teaspoon baking powder

1 cup nuts

Got everything? Okay, here we go!

  1. Preheat oven to 375.
  2. Beat eggs.
  3. Add sugar, oil and vanilla.
  4. Beat until creamy.
  5. Stir in zucchini.
  6. Stir together dry ingredients in separate bowl.
  7. Add both mixtures and mix well.
  8. Add nuts.
  9. Pour into greased and lightly floured pan.
  10. Bake 1 hour or until done.
